We source Sicilian pistachios, Madagascan vanilla pods, Belgian Callebaut chocolate, and seasonal fruits directly from trusted growers. What goes into our gelato is exactly what you'd find in a fine kitchen, simply taken further.
Gelato and ice cream are fundamentally different experiences. Our gelato contains significantly less air and less fat than conventional ice cream, resulting in a denser, silkier texture and a far more intense flavor in every spoonful. We also use the 72-hour slow-chill method perfected by the Martini family in Florence in 1958 — a process that preserves the full depth and aroma of every natural ingredient.
